Cinnamon Apple Snack Cake
3 eggs
1 cup granulated sugar
1/2 cup (1 stick) margarine or butter, melted
14 HONEY MAID Cinnamon Grahams, finely crushed (about 2 cups crumbs)
1 medium apple, peeled, cored and chopped
3/4 cup chopped PLANTERS Walnuts
2 Tbsp. powdered sugar
PREHEAT oven to 350°F. Beat eggs lightly in medium bowl with wire whisk. Add granulated sugar and margarine; mix well. Stir in graham crumbs, apple and walnuts until well blended.
SPREAD evenly into greased 8-inch square baking pan.
BAKE 40 to 45 minutes or until firm to the touch. Cool completely. Cut into 16 squares to serve. Sprinkle with powdered sugar just before serving.

1 cup light brown sugar
2 tablespoons evaporated milk or cream
2 cups sliced apples
1 1/2 cups sifted flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup shortening
3/4 cup sugar
1 egg
1/2 cup milk
1/2 teaspoon vanilla extract
PREPARATION:
Mix together 1/2 cup butter, 1 cup brown sugar, and 2 tablespoons evaporated milk or cream; spread in bottom of an 8-inch square baking pan. Arrange sliced apples on the brown sugar mixture. Sift together the flour, baking powder, cinnamon and salt.
Cream shortening with sugar; beat in egg the add sifted ingredients alternately with 1/2 cup milk and the vanilla extract.
Pour batter over apples. Bake at 350° for 35 to 45 minutes, until cake is done.

Apple Cake
Original recipe yield: 1 -10 inch tube pan.
INGREDIENTS:

3 cups all-purpose flour
3 teaspoons baking powder
2 cups white sugar
4 eggs
1 cup vegetable oil
1/2 cup orange juice
2 1/2 teaspoons vanilla extract
1/2 teaspoon salt

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch tube pan.
Sprinkle sliced apples with 5 tablespoons white sugar and the ground cinnamon. Toss to coat and set aside.
Mix the flour, eggs, 2 cups sugar, baking powder, salt, vegetable oil, orange juice and vanilla until well blended. Batter will be fairly stiff.
Pour 1/2 of the batter into the prepared pan. Place the apple mixture over the batter then pour the remaining batter over the top.
Bake at 350 degrees F (175 degrees C) for 60 to 80 minutes. Let cake cool in pan.

Apple/Raisin Cake
Turn oven on to 325 degrees.
1 c canola oil, 2 c sugar
3 med eggs , 4 med apples with peel (diced or sliced thin)
2 generous hand fulls of raisins, 1 T vanilla
3 c flour (do not sift) , 1 T heaping Cinnamon
1 t baking soda, 1 T nutmeg
¼ t baking powder, 1 t salt
In large bowl measure oil, sugar, vanilla, add eggs beat until mixed well. Add apples and raisins, mix well. Add salt, baking soda, cinnamon, nutmeg, and baking powder, mix well. Add flour in small amounts (or your kitchen will be filled with a fine mist of flour).
Pour into bundt pan (grease liberally) or 2 greased loaf pans. Bake for approximately 1 hour, check with toothpick for doneness, if toothpick comes out clean remove from oven and place on cooling rack. Cool 30 minutes before serving.

OLD FASHIONED APPLE CAKE:

1 teaspoon cinnamon

1 cup chocolate chips (optional)
In a large bowl, mix together sugar, oil, eggs and vanilla. Blend thoroughly. Sift together the flour, salt, baking soda and cinnamon. Stir in the dry ingredients. Fold in apples, walnuts and chocolate chips. Pour into the prepared 9 x 13-inch pan and spread evenly. Bake at 325 degrees for 1 hour. Cool on cake rack.
