Contrary to popular believe, rice is only common in the southern regions. The rest of the country eat other types of grains as their main stable diet, like wheat, beans and corn. ( From dumplings, bread, noodles of all sorts etc )
China is a big place and the food varies from region to region like night and day. The food you see on the menus in chinese restaurants are mostly modified for commercial purposes to suit western taste or are really dishes for special occasions.
But in general, if it doesn't kill you, it's good for the menu. Perhaps the question should be " What don't they eat ?"
The least common items on a chinese dinner table would be cheese and salads.

they literally eat anything that moves. It depends on what your teacher wants to hear. Does he want to be nice to a culture he likes or does he want you to talk about dogs or something. Authentic chinese food is different from what you eat at chinese restaurants here.
Some traditional dishes..... cow ya- peking duck.
Dumplings is a very widespread staple, different from the chicken and dumplings you know, but too much to explain, you can try dumplings at local restaurants but they are overpriced.
yang jo chow fan- fried rice, a lil diff, but mostly the same as here
chuan (pronounced chuar in the north) is like a kabob but no vegetables usually sheep (yang rou), the makers of chuan are muslim, mostly sheep but can get beef or squid but no pork.
McDonalds, KFC, pizza hut, these are all available in china, and hot dogs, everyone in the world knows hot dogs. Plenty of other stuff too. conventional and unconventional.
and small birds, like pigeons or something, fried with thier head and wings still attached, gross.
rice and noodles are certainly everywhere.

on further thought, one thing that is educational and your teacher should or already has mentioned is that china has at least 5 regional cooking styles, they have unique characteristics and names you should mention, they are sechuan, hunan and some others. look for chinese cooking or cookbooks for details on these five styles which will be a paper alone. the above foods are from the northeast (beijing area) not sure which style it is though. Northeast is characterized by huge plates of meat. cause Not as good farming near russia and the cold.

rice, mushu pork, shrimp fried rice, mu goo pei, pot stickers, Mongolian beef, general tso's chicken, and the list goes on and on. go to a Chinese restaurant and get a menu it might help.
