I am making a sausage and potato and carrot dish in the crockpot with some cream of mushroom and cream of celery soups poured over it, do i need to cook the italian sausage before i put it in the crockpot , or will it be ok cooking in the crockpot alone for 5 hours? I know it will not brown if I don't put it in a skillet for a few minutes, but that doesn't matter I am just concerned about it cooking all the way through.

Other than cooking stew or some form of beans, I have never really cooked in the crock pot before. Here is the first thing that I tried after I was married and was using the crock pot we were given as a gift. I took a small pork loin and then covered the loin in a bottle of barbeque sauce. You can add more if you would like and then I added enough water to cover the pork loin. I added seasoning to the pork loin and set the pot to cook on low heat for about 9 hours. After the 9 hours, you could pull the pork with a fork and it made great sandwiches.

If you are watching your fat intake you should probably cook your sausage in water first, this will help draw out the fat that will make your dish greasy when you cook it in your crock-pot. By the way I would like to try your recipe it sounds delicious:)

It'll cook in the crock pot. Unless the recipe specifically tells you to cook it first you don't cook anything you add to the crock pot.

It should cook very easily in your crock pot. If you want crispy skin though then sear first. Sounds delicious!!!

They should cook all the way through in 5 hours.

But, putting them in a skillet and browning them will add a lot of flavor and will remove a lot of fat.

Personally I would brown the sausage first just to get some of the grease out. If you put it in there without browning the fat will pool to the top and might look a little icky.

It will be fine in the crock pot on high for 5hrs, if you don't want it brown.
