You understand the concept of twins, right?

They can tell when the egg is held up to the light
if there are 2 yolks in there.

Eggs can have double yolks, just like human beings can have twins. However, it's a statistical rarity, just like in humans.

I've seen cartons of eggs (I've only seen boxes of 8, not dozens) in my local supermarket, which are labeled just like the box you purchased. The egg producers (simply enough) can hold the eggs up to a light, and SOMEtimes they can see double yolks...but not always, hence the "85 percent" disclaimer.

A hen that has laid double-yolk eggs in the past is much more likely to do it again in the future, just as twin (or other multiple) births seem to "run in families" in humans.

I know why the eggs have double yolks, but how they could guarantee it would be through candling the eggs. I'm going to guess that chickens that lay double yolk eggs do it more often than chickens that don't. So if you have a room full of chickens that lay double yolks the odds would be better to get double yolks more often than not.

The same way they check for good eggs and bad. Each each passing before a powerful light shinning from behind.... They can see how many yolks are inside the same way they check to make sure the egg hadn't been accidentally fertilized into a baby chick.

Someone at the egg farm is phucking with you - they can see through the shell with a flashlight - and they boxed up all the twins into one box and you got it. Congrats - thats way rare. Go buy a lottery ticket STAT!
