you can't beat a good stew at this time of year.
First, put you stew pan on the hob on a high heat and flash brown the outside of the beef - so it is a deep dark brown and still red inside. Do it in batches, so there's not too much in at one time which will lower the temperature. This is what gives the stew a lovely rich dark colour.
Then take it off the heat and add your other veg. Whatever you have, the key ingredients to make it delicious are onion, carrot, celery and bay leaves. Those alone will do but any other root veg, herb, mushrooms etc are great
put it in the oven with the lid on on a low heat - 150 say
leave it for hours

i would do a beef and guinness pie.
brown the beef and remove from the pan. soften onions and carrot in the same pan, then add back the beef with guinness and beef stock, bay and seasoning. cook on low heat for 1.5 to 2 hours.
put into a pie dish and top with pastry, then bake till done.

Beouf Bourgignon. Search the web for a recipe - basically needs carrots, onion, mushrooms, red wine and thyme. Goes well with dumplings flavoured with thyme and mustard flour. It's a winter fave in our house, takes about 15 mins to get going then you can just leave it for 1.5 to 2 hours and do other things until you are ready to put the dumplings in.

Why not make a good ole beef and onion ale pudding. and steam for 1 1/2 to 2 hours, and enjoy with potatoes and variety of steam veg.

Marinate in vinegar, salt, pepper, garlic, ginger, indian spices.Add meat tenderizer. Marinate for a couple of hours at least. cook on low flame for a couple of hours or till tender.
