Buddhists consider the cow as sacred because the goddess of mercy's parent was punished by being reincarnated into a cow for several lifetimes. They hold it sacred as a respect to her the same way Catholics hold the Virgin Mary at a high regard.

I think you are refering to hindus. They consider all life sacred and that animals are not meant for human consumption! They believe it is against the nature of man endowed with an intellect to merely kill animals to satisfy his needs. With intellect comes great responsibilty to look after the world! Cows were central to the hindu household in earlier times because milk and milk products made up a big part of their diet. India still continues to be the largest producer of milk and milk products. A living animal is more productive than a dead one is the idea behind it. They live lower on the food chain which ensures enough food for everyone. Besides killing does make a person more violent in general. I think it is a wonderful way to that is good for the environment too. These beliefs have ensured the survival of a lot of indigenous species in India which would have definitely died out given the sheer size of the human population in India. But i'm also for India controlling the growing population of people which negatively affect our habitat.

In what religion? If you are referring to Hindu, they are not sacred but taboo. Much like the pig to the Muslim or Jew. See article below for great discussion.
