Basic Crepe Recipe
4 eggs
1 cup flour
1/2 cup milk
1/2 cup water
1/2 teaspoon salt
2 tablespoons melted butter
Measure all ingredients in to blender jar; blend for 30 seconds. Scrape down sides. Blend for 15 seconds more. Cover and let sit for 1 hour. (This helps the flour absorb more of the liquids.) Makes 12-14 crepes.
For a Sweeter crepe:
Add 2 teaspoons sugar and 1 teaspoon vanilla.

Crepes...

1/2 cup milk
1/3 cup flour
1 tsp granulated sugar
1 egg
1 egg white
2 tsp unsalted butter, melted
1/4 tsp salt

In a blender, combine the milk, flour, 1 tsp of the granulated sugar, the whole egg, egg white, melted butter, and salt. Process until smooth. Let stand for 30 minutes.
Spray an 8-inch nonstick skillet with nonstick cooking spray. Heat over moderate heat. Spoon the batter, a generous 2 tbsp at a time, into the pan and swirl to coat the bottom. Cook for 15 seconds or until lightly browned on the bottom. Lift and turn the crepe over and cook for 5 seconds or until cooked through. Slide the crepe onto a plate, cover with wax paper, and continue making crepes and stacking them with sheets of wax paper in between. You will need 8 crepes (if you are adept at making crepes, you may get more than 8).

Basic Crepes
Yield: 12 Servings

Ingredients

1 1/4 C All-purpose Flour
1 1/2 C Milk
1 Tb Butter; Melted
1 Egg
Non-Stick Cooking Spray

Instructions

Cooled crepes can be stacked in wax paper and frozen in a zip-top freezer
bag for up tp three
months.

Place flour in a medium bowl. Combine milk, butter, and egg, and add
mixture to flour with a
wire whisk until almost smooth. Cover batter, and chill for 1 hour.

Coat an 8-inch pan or non-stick skillet withcooking spray and place over
medium-high heat until
hot. Remove pan from heat, and pour scant 1/4 cup batter into pan, quickly
tilt pan in all
directions so batter covers pan with a thin film. Cook about 1 minute.
Carefully lift edge of
crepe with spatula to test for doneness. The crepe is ready to turn when it
can be shaken loose
from pan, and the underside is lightly brown. Turn crepe over, and cook 30
seconds on the other
side.

Place the crepe on a towel, and allow it to cool. Repeat procedure until
all of the batter is used.
Stack crepes between single layers of wax paper or paper towel to prevent
sticking. Makes 12

4 large eggs
1 cup flour

Put all the ingredients in your blender and blend for 1 minute.
Scrap down the sides and blend for an additional minute or until smooth.
Refigerate for 1 hour.
To Cook:.
A- Use an upside down crepe pan and follow instructions or.
B- Use a non stick skillet.
You do not have to use additional oil or fat.
Pour a little batter in the pan, just pour in enough batter so it will thinly coat your pan, tilt the pan to spread the batter evenly on the bottom of the pan Cook over medium heat for a couple of minutes until the bottom is light brown, flip and cook for a few seconds more Remove from heat and stack on a plate with wax paper between them.
