You can use fresh corn, frozen corn or even canned corn. Corn Pudding Ingredients * 4 cups frozen corn kernels (about 19 ounces), thawed * 4 large eggs * 1 cup whipping cream or half and half * 1/2 cup whole milk * 6 tablespoons sugar * 1/2 stick butter, room temperature * 2 tablespoons flour * 2 teaspoons baking powder * 1 teaspoon salt 1. Preheat your oven to 350° F. While oven is heating, prepare an 8 x 8 square baking dish. 2. Mix all the above ingredients and blend well. You can use your hand mixer, but a blender or food processor works best. 3. Pour pudding mix into the baking pan. Bake approximately 45 minutes or until the pudding is set in the center. Cool 10 to 15 minutes. Makes 4 to 6 servings
