A fresh vegetable salad, almost like a salsa, can be made from any combination of vegetables, herb, and vinaigrette. Pick from what looks tempting at the market and parboil vegetables that need it. Some combinations to try:
- Carrots, celery, scallions, and dill
- Peas, turnips, bell peppers, and chives
- Potatoes, radishes, red onions, and parsley

Here I have a sweet and tangy mix of flavors salad simple and delicious...

1 pound sweet potatoes, peeled, quartered lengthwise, and cut crosswise into 1/2-inch-thick slices
3 tbsp olive oil
1 tbsp fresh-squeezed lemon juice
1 tbsp orange juice
1 tsp honey
1/4 tsp salt
1/4 tsp black pepper
1 medium bunch arugula, torn into pieces
1 navel orange, peeled and cut into sections
1/2 small red onion, thinly sliced crosswise
3 tbsp raisins

1. Preheat oven to 400 degF. Line large baking pan with foil. Lightly coat with nonstick cooking spray. Toss sweet potatoes on pan with 1 tbsp of oil.
Spread in even layer. Roast potatoes until tender and lightly browned, about 20 minutes.
2. In small bowl, whisk together remaining 2 tbsp olive oil, lemon juice, orange juice, honey, salt, and pepper. Taste dressing and add another 1 tbsp lemon juice, if desired.
3. In large bowl, toss together warm potatoes and dressing. Add arugula, orange sections, onion, and raisins. Toss to mix.

For a simple salad, packed with flavor- I would start with washed romaine lettuce, dried and cut into bite-sized pieces. Also, some fresh spinach (washed and dried). Then I would add sliced black olives, thin slivers of red onion, chopped walnuts, crumbled feta cheese. For the dressing mix one part 'good' balsamic vinegar and 2 parts 'good' olive oil with a pinch of salt and freshly cracked pepper. YUM!!

Another colorful idea- Start with washed romaine lettuce, dried and cut into bite-sized pieces. Fresh spinach. Add carrot matchsticks, sliced red peppers, sliced cucumbers, and red onions. Cube an avocado into the salad when you are ready to serve and top it off with your favorite dressing (I would do Ranch or a simple lemon-olive oil dressing).

Don't forget to put the plates where you are serving the salad in the freezer about 30 minutes before serving. The salad will stay very crispy and it'll add a nice touch!

Best Chicken Pasta Salad

2 boneless, skinless chicken breast halves
3/4 cup steak sauce
1 (12 ounce) package fusilli pasta
2 cubes chicken bouillon
1 Vidalia onion, diced
2 avocados - peeled, pitted and diced
1 cup halved cherry tomatoes
1 cup Ranch-style salad dressing
DIRECTIONS
Preheat an outdoor grill for high heat. Place breasts into a glass baking dish and marinate in steak sauce for 15 to 60 minutes.
Grill chicken until no longer pink and the juices run clear. Remove from grill, and chop into bite-size pieces.
To a large pot of boiling water, add bouillon cubes and pasta. Cook pasta until al dente. Drain, and rinse under cold water.
In a large bowl, combine chicken, pasta, onion, avocados and tomatoes. Mix in salad dressing, cover, and refrigerate until chilled.

Fresh iceburg and romaine lettuce- equal amounts
Green bell pepper cut into strips
Red onion cut into strips
Tomato chopped
Shredded cheddar cheese
Baby carrots or any other veggie you like

Be sure and wash all ingredients. Place in a bowl and toss.
Note: The fresher your ingredients are the better it will taste.

i really like this Rachael Ray Sweet Honey Dressing
1 TBSP honey
2 TBSP white wine vinegar
1/4 C extra virgin olive oil
2 sprigs fresh dill, chopped
Salt & Pepper
Mix them all together in the honey jar & shake.

salad greens a can of mandarin oranges almond slivers and italian dressing is real good. easy and pretty. you can even add chopped apple and cubed cheese. don't make ahead of time tho it gets soggy if you do.

Choose items you like to eat...then add BACON......AVOCADO.....CHICKEN.....CHEESE (preferably Bleu) YUM........also the best Ranch vDressing ever is Marie's Ranch (trust me) - Enjoy!
