A good side dish to go with Shrimp Scampi would be a nice Rice Pilaf. This matches very nicely. A good sidedish that wouldn't take away from scampi is french bread. Offer toasted and untoasted because some people don't like either. Also offer some with garlic butter and some without, for the same reason =\. Basically, some sort of grain like white rice, rice pilaf, or a light pasta, nothing too powerful.

I usually serve cous cous (the best is with roasted pine nut) and (cooked on the stove) fresh asparagus, with garlic and olive oil. Yum.

And definitely a dry white wine. Chablis would be good. So would sauvignon blanc. It's a little sweeter than chablis, I think.

Let's see......

Proper etiquette requires the following.......
1) a pasta, such as linguini or angel hair
2) a salad, usually arugala and raddichio
3) white wine, preferably a sauvignon blanc
4) something sinfully delicious for dessert, perhaps cheesecake

It all comes down to your own tastes tho......

Maybe you could do a seafood combination get some clams and stuff them with crab meat tie strings around them and put them in a deep frier it works great with shrimp....and if your looking for food trays with it just for dessert try some crackers pepperoni and cheese....

I'd go with linguini, garlic bread, a mixed green salad, white wine and a Tirumisu for dessert.

A big bowl of brown rice would be nice but barring that I would recommend cancer policies for your victims.
