I love this recipe, although it'll serve more than 3, but the leftovers are even better after sitting.
2 pounds ground beef
2 cups diced onions
2 (15 1/2-ounce) cans pinto beans
1 (15 1/2-ounce) can pink kidney beans
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 1/2-ounce) can Mexican-style stewed tomatoes
1 (14 1/2-ounce) can diced tomatoes
1 (14 1/2-ounce) can tomatoes with chiles
2 (4 1/2-ounce) cans diced green chiles
1 (4.6-ounce) can black olives, drained and sliced, optional
1/2 cup green olives, sliced, optional
1 (1 1/4-ounce) package taco seasoning mix
1 (1-ounce) package ranch salad dressing mix
Corn chips, for serving
Sour cream, for garnish
Grated cheese, for garnish
Chopped green onions, for garnish
Pickled jalapenos, for garnish
Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

BEEF ROLL-UPS
2 lbs ground beef
1 onion - chopped
1 can enchilada sauce
2 cans cream of chicken soup
3/4 cup water
1 can chili peppers
3/4 lb Velveeta cheese - cubed
corn tortillas
Place all ingredients in your slow cooker. Stir to mix. Cover and cook on low
for 7 to 8 hours. Serve with warm tortillas.

Crockpot Enchiladas
1 pound lean ground beef
10 (6 inch) corn tortillas, quartered
1 (1 ounce) package taco seasoning mix
1 1/4 cups water
1 (12 ounce) jar chunky salsa
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
4 cups shredded Mexican cheese blend
DIRECTIONS
Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add taco seasoning and water; simmer for 15 minutes over low heat.
In a medium bowl, stir together the salsa, cream of mushroom soup and cream of chicken soup. Mix in most of the cheese, reserving 3/4 cup for later.
Place a layer of tortillas covering the bottom of a slow cooker. Scoop a layer of the ground beef over that, and then spoon a layer of the cheese mixture. Repeat the layers until you run out of stuff, ending with a layer of tortillas on the top. Top with remaining cheese.
Cover, and cook on High for 45 minutes to 1 hour.

This is our favorite in my house Slow Cooker Brisket INGREDIENTS 1 teaspoon salt 1 teaspoon chili powder 1/2 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon celery seed 1/4 teaspoon pepper 2 1/2 pounds fresh beef brisket*, trimmed SAUCE: 1/2 cup ketchup 1/2 cup chili sauce 1/4 cup packed brown sugar 2 tablespoons cider vinegar 2 tablespoons Worcestershire sauce (make sure its OU) 1 teaspoon liquid smoke flavoring (make sure it is OU) 1/2 teaspoon ground mustard DIRECTIONS Combine the first six ingredients; rub over brisket. Place in a slow cooker. In a bowl, combine the sauce ingredients. Pour half over the brisket; set the remaining sauce aside. Cover and cook on high for 4-5 hours or until meat is tender. Serve with the reserved sauce. For a vegetarian option we like slow cooker mac and cheese or cheese tortellini in alfredo or marinara sauce. Here is how my mother makes mac and cheese. Ingredients: 1 1/2 cup dry macaroni 1 1/2 tablespoon light, soft tub margarine 6 ounces light Velveeta cheese, sliced 2 cups fat-free milk 1 cup fat-free half-and-half Combine macaroni, and butter. Layer cheese over top. Pour in milk and half and-half. Cover. Cook on High 3-4 hours, or until macaroni are soft.

You could make chili. Just do it a normal way and cook it on low. most recipies with ground meat, you are going to have to cook the ground meat before putting it in the slow cooker.

A good slow cooking ground beef recipe.......
Fried Taco's (Copyrighted)
As many taco's as you need would determine the amount of ground beef.
Soft Taco's
Refried Beans
a deep frier or oil
a pan
some paper towels (Excess grease)
some sharp cheddar cheese works best
what ever else you like on your tacos.
Ok now take the ground meat and put it in a pot. Add the refried beans. Let cook till brown. Take take The cheese and spinkle it on the soft taco. Put the meat on the soft taco along with the cheese. Take a tooth pick and put one on each end of taco going through to keep the taco together while frying put in oil in pan or deep frier. Fry till brown and crispy to your liking. Put on reg pan to cook well. Then put on paper towel to get excess grease off and tada. FRIED TACO'S.
