I am a health educator who works with patients with diabetes. My husband's also has a history of diabetes. We provide our patients with desserts made with Splenda (a sugar substitute). Splenda is the only sugar substitute that has good results with baking. Providing fruit is not a good alternative because of the natural sugars. People with diabetes are to only eat limited amounts of sugar. There are a lot of places now that prepare desserts with splenda. I would have little menu cards/tent cards that identify which desserts that are provided are sugar free.

If you go to a good bakery, you can get sugar-free cookies that look great and taste almost as good as the real thing. I've seen sugar-free cakes at different grocery stores' bakeries, and I'm sure you could find them at bakeries. There are lots of sugar-free choices nowadays.
Perhaps talking to one of the diabetic guests would be a good idea-just ask what they snack on.

Simple, cost effective suggestion... Do an angel food cake and add a fruit topping or some other topping that diabetics can eat.

Ask whoever is making your cake. Most will be able to make a sugar free version. We did this, we got a small sugar free cake for my mom and other relatives who are diabetic. Worked out great, the girls at the cake table kept the sf cake separate and we let those who needed sf that there was something special for them at the cake table.

Some fresh fruit, maybe a meat and cheese tray with crackers.
