You want to change some soy bean into soybean paste.

To do this you boil some raw soy bean and change it into a kind of paste, grinding it.
In this case, you need just a little water only necessary not to scorch it while boiling it.


Boil is an appropriate word?
If not,what is an adequate word?
Can you use the word "steam"?

To boil something you must completely cover it with water. This doesn't sound like what you are doing.

Simmer would also indicate more liquid that it sound like you are intending - just not brnging it to an actual boil.

To steam it you would place them ABOVE the boiling water in some sort of a steamer basket. That doesn't sound like what you are doing either.

I would just probably say 'sautee them in a little water'.

Simmer? (With an explanation about how much water to add) Simmer implies a very low-temp boiling process.
