The solid walls separating the segments cause the bamboo to be rigid in cross section, which makes the stalks much stronger. If it were a hollow tube without walls inside, the tube could be crumpled and the bamboo would fall down.

The voids cause the plant as a whole to be much lighter.

while still staying strong, the segments are light and flexible. the air pockets in the segments are useful for cheap insulation (on houses) and they look pretty.
