Some reviews said something about Level-1 raid damaged or killed their hard drives. Im just wondering because Im planning on setting two 250gb hard drives into a level 1 raid array and a little worried about the life time.

And if I do install it as a raid. Will the drive appear as one hard drive? or two? because I have hard drive monitoring software running scans to check my drive's life.

Raid lvl 0/1 is a speed boosting architecture that stores multiple copies of the same files on multiple disks. Typically once you have built the array, the OS will see the drives as a single drive as far as space constraints are concerned for in reality, in a two drive array, every file is duplicated on each of the drives. This will not reduce the rated life of the HDD, nor will it cause any damage.
