206 bones is only a convention.
In fact, abberrations are so common, that chances are you have some supplemental bones. These are often two bones which should have fused but didn't, or bones intertrwinged in cranial sutures, axtra ribs, extra vertabrae (my sister has one) and stuff like that. Most are hereditary. And you most probably won't even notice them. I work a lot with human bones and tell ya, it's really common.

I forgot: Of course you can also have less bones than normal. one vertebrae less (because it fusion with the sacrum) or you lack one teeth (the most common lack is the third molar, followed by the second incisive and the second praemolar) etc.
