I notice that normal saliva does not change colour when we eat coloured foods. But at the back of the throat, there's another type of saliva that changes colour. Are these two different things, or are they the same? By "the back of the throat," I mean you have to go "khhhhh" to spit it out.

the one which you call as the "saliva at the back of throaT" isn't exactly saliva. it is already called as bolus.it has changed color since the food has already reacted with the acids and minerals found in the saliva.
therefore we have only one type of saliva.the one you described is salivary enzymes+chewed food+minerals etc=bolus.

that kind of saliva is actually the same saliva,difference is that kind of saliva is stored around the larynx and it have been reacted with the food you've ate.(colourings,flavourings and mineral)
