Definitely the Mirage. It has a Polynesian/Tropical theme throughout the property. There's a volcano that erupts every 15 (or 30 I forget) minutes every evening right in front of the property.
Just got back from there actually. I've stayed there twice. While it is not quite as nice as the Bellagio, it's definitely a nice property.
Also Mandalay Bay has a beach resort theme. I've stayed there once, and have to say while Mandalay is newer, I think it's overpriced for what you get.
As for the other answers, Palms is nice, but it's theme is more hip/modern/lounge than tropical. As for the Rio, it's theme is Mardi Gras, not tropical, so I don't know what that person was thinking. My only visit there I thought it was WAY too loud and way too bright. (The music on the slots floor during the overhead show is deafening).

If you want tropical, I don't think you can get much more tropical than the Mirage. The swimming pool is all palm trees and little islands with water falls. The Volcano out front is just for starters. The Mirage has a huge salt water aquarium . The Siegfried and Roy secret garden, and a Dolphin habitat etc...

I personally like to stay at the Palms, but that's just my taste. They go out of their way to please the customer, the prices are very reasonable and the clubs and restaurants are absolutely great! My favorites are the Sushi Bar and the Ghost Bar...
