tha's s becasue suger is in teh recipe so they have to add it or else people will say "heay this isn't jams or jellies i want my money back" the company will go out of business and they will lose jobs the people will be unemployed theier kids will do drugs and their wives will take off in the truck and never come home.

Sugar is used for many reasons, but primarily to decrease bacterial and mold growth (spoilage). Sugar performs this especially well for cooked foods, esp. fruit. Preservatives work by killing or stopping the growth of microorganism. All organisms require a narrow range of conditions in which to live: too acid or too sweet and nothing, not even bacteria can live. It might seem surprising that sugar is a preservative, but jam, so long as water doesn't settle out is far too sweet for bacteria. Mold on jam occurs where water has formed on the surface, significantly diluting the concentration of sugar.
