As a customer, what do you look for when going to a restaurant, whether it is fine dining, or a casual/fine dining restaurant. What kind of ambiance is would you preffer? Please explain with as much detail as possible. Also, what would you look for in a breakfast restaurant that would close at around noon? For those with busy schedules (work, kids, school, etc.), what would you want out of a restaurant of such style in order to accomodate to you when you can't make it during open hours?

I'm a manager of a restaurant that does $77,000 each week, so, I'll answer a few questions. First, we're a family rest. but, people complain that it's too loud at times. I would make sure that the atmosphere is friendly, but not too loud!! If I was going to a breakfast place, I would say quick service, reasonable prices. People don't have much time in the AM plus, they won't spend as much money as they will at night. I would have a very well trained staff that is very SERVICE oriented. You can basically get the same food anywhere, what will make the difference is your staff. Hold out for the good employees, don't hire just anyone. I would become very entrenched in the community, making sure that you're including everyone, i.e. don't help one school, but exclude the others. Let your business be civic minded. I probably could come up with alot of other things, but there's not enough space.

This is my list of things that notice, things that make me think I’m getting good value for the money I’m spending.

plenty of elbow room, setting not too close together

cloth napkins

china should be simple, no loud colors and patters

the same goes for the decor, simple not cluttered

wait staff available but not hovering, the perfect waiter is always there when you need them and never there when you don’t

this is a huge pet peeve of mine:
you order an appetizer and you use your fork, the waiter comes to clear the plate, takes your fork and sets it on the table. The single biggest determining factor that says I’m in a class establishment is when the waiter takes the fork away and brings me a new one, it’s such a simple thing but to me very important.

It’s all about good manners, keep it simple, less is more

My pet hate at a restaurant, as a shift worker ( in a late night restaurant at a five star hotel ) is when they stop the breakfast menu at a certain time you get there looking forward to a nice breakfast and they go " sorry the breakfast menu goes off at 11am " like a big truck comes and takes away all the eggs and bacon away. At the five star where I work if a guest asks for roasted unicorn at midnight we say "yes sir how would you like it, with salad or potato "

I'm not quite understanding the "when you can't make it during open hours" part of the question.......but,
I can say that I worked as a coffee-shop style breakfast server for over 10 years and the quality of the food does matter!!
Also being consistent with recipes and knowing the customer's name.
Great coffee is very important and efficient, personable servers is a must!!

I prefer casual fine dining. On very rare occasions a local diner with great cooking. Best breakfast ever had out was a bed & breakfast, everything was so fresh and homemade.

Food is first, second is service, third is atmosphere.
