I'm not a huge fan of the actual movie, but the art design in the credits for A Series of Unfortunate Events is really interesting. Oh, and I agree with some of the others about Monty Python and the Holy Grail.

Opening Credits
#1 Star Wars opening (although that's not really any "credits", but it got your attention).
#2 Superman - The opening flyby of the title sequence was unique.
End Credits:
#1 Monty Python and the Holy Grail (lots of stupid, funny inserts)
#2 The Naked Gun movies (they also had funny stuff in the credits)

I really like the credits in Sleepy Hollow because the words turn into snow and begin falling on the opening scenery. Pretty cool.
I also like the Out takes from A Bug's Life.

grumpy old men and grumpier old men the outtakes as credits roll are a hoot, also there's something about mary with everyone singing to build me up buttercup, just friends with ryan reynolds in a fat suit. most comedies have cute credits now.
