It all depends on the person. Someone who has spent their life stuck at home and the first movie they ever see is "Saw", then every thing they see after that will be compared to that one movie.
Personally, I don't find many movies to be violent, as I am a wrestler. I have seen people in real life being carried off on a stretcher, unconcious with a neck brace. Also, I have seen blood stream from someone's nose on multiple occasions, covering their entire face. So to see these events in a movie I no longer view as violent. Maybe cruel and unusual, but not violent.
If I am told to picture something violent, I see a man standing over a lifeless body (of course this is all done with movie magic, and I have never seen this in real life, thank God) covered in blood (or ketchup with the effect of movie magic). And the film would have had to show how this man became covered in all that blood. So, to answer your question, this is what I would view as being violent.
Also, if you watch UFC enough then you will begin to see things as less violent as you will compare it to two men trying to knock the living hell out of each other.

If someone says a movie is violent I think of very graphic deaths or torture such as Hostel has or The Hills Have Eyes.
I watch a lot of movies of all types and those grossed me out.

If something happens to a charactor physically that I wouldn't want to happen to me, I would describe that as violence. It doesn't neccessarily mean that I won't watch the movie. It all depends on how well the movie is made, not how violent.
