In my experience Yahoo is the easiest. I've had issues with MSN/Hotmail in the past randomly deleting inboxes during maintenance intervals. Personally I prefer Gmail (Google Mail) since the spam filtering works so well. Gmail also has the most conservative interface, displaying only what you need without becoming too overwhelming with banner ads and other functions.

Both Yahoo and MSN/Hotmail are basic and free.

I use hotmail and also yahoo.
If you want a more secure e-mail, you could also try safe-mail. these are all pretty basic and are all free to use.

yahoo is simple and easy to use.... other free e-mail services are aol, msn, hotmail,gmail...
