This is not the case. The spoon is placed on the right side, and the fork on the left, but Americans pass the fork from the left side to the right for eating. (Europeans cut their meat etc. with their forks in the left hand, then leave it there for eating.)

Most people use the fork and spoon with the same hand depending on if they are right or left handed.

at some point someone decided to swtch the fork to the right hand after cutting the meat so everyone could eat dinner a little more safely.

Never heard that one. Both are used by my right hand. Just put one down and pick the other up. There is time to shovel everything on my plate in my mouth with out having to use both hands.

Because the knife is in the right hand, for right handed people, that is 'right'.
