Probable the same reason why a runway model most likely wouldn't be able to rebuild a tranny in a '67 pontiac gto,it just wasn't their bag or cup of tea, which ever description you prefer.
Disclaimer:
This answer was in no way meant to question the mechanical know-how of runway models.I'm sure some had older brothers or fathers that did this for a living and probable could do such mechanics. But that scenerio just would not work with the point I was trying to make. Having said that I wish to apologize to the runway models whom my analogy may have offended and it would be my honor to have the few mechanically abled runway models to rebuild or fix anything in their field as a master mechanic that they fought for so long in their struggle to overcome criticism and stereotypes from simple minded people who said an autoshop is no place for a runway models to strut her stuff on the catwalk.Yeah the catwalk. They shake their little tush on the catwalk. What was the question again?Oh yeah, the professor was a scientist not a deckhand.
Disclaimer:
In no way was I trying to imply that a deckhand could not be smart enough to have the intellect or mental capability to perform research or theoritic solutions like that of a scientist ,nor was I implying that a scientist would be far to intellectually surperior or above the duties of a deckhand.
But seriously, crew of the SS Minow, the hole was not that big.Had the Professor fixed the hole,Gilligan would have botched that up (no offense LiL' Buddy). So instead the Professor worked on the radio, only for the slight hopes he could tune in some easy listening music to help seal the deal with Ginger .Even Gilligan couldn't mess that plan up.To sum it up the Professor was a pimp who just wasn't an aquatic body repairman.

cuz he's a scientist. my sister is an engineer and cannot boil water with causing grievous self-injury, but was the only one in her freshman class who could run an electromicroscope. scientists can be like mcgyver on building some kind of bizarre technological wonder out of garbage but can't figure which end of the hammer you hit a nail with.

The resin did not harden and the boat fell apart in episode one. He tried. And the cocoanut was only the battery and not the radio.

Easier to fix electronics than wood or fiberglass...or maybe...just maybe he was the one who caused the Minnow to have the giant hole.
Maybe the professor had ulterior motives....yeah....
