Look in your table and find p=0.95, the Z value for this is what you want.

I get 1.645

To get all the data within 95 % on either side of the mean..
Since the normal curve is symetric, and measured from the center = 0, divide .95 by 2 and get .475.
Find .475 in the body of the table and read the corresponding z.

To cut off the top 5% of the data, the answerer before me is right. 1.645
