maybe a collage of photos collected by the three kids... family photos that you might have duplicates of that you are willing to give to the project.
Or try pop tops... you know, those little thingies on the canned sodas.
Or you can pin a map to the bristol board and put pushpins with tiny name tags of people the three of them have met from various parts of the world... or famous people...
Or you can collect 1000 different types of thread/string/yarn... colors, texture, length...
Or you can collect 1000 receipts from various purchases made in the 3 families... divide the board into sections such as groceries, gasoline, movies, gadgets...etc.

buttons,leaves,shells,pictures (family,magizine clipings or animals?) pennies then they could start a savings account (piggy bank)after wards or how about telling them to find a few things each day small enough to put on the bristol board (keeping a guid line: like maybe no live bugs or moms jewelry:)each kids collection will be different making it more fun. you came up with great idea let us know what you choose for the collection.

So, I guess it has to be one thing then? I thought maybe pictures of kids around the world, handprints, stamps, stickers, lego, feathers, coloured paperclips would look cool too, or fingerprints with little eyes and smileys on them, footprints, pics of eyes, coins, beads, split peas, bottle caps, I could go on, but, I hope this helps you even a little.
