Try to focus on things that go along with what he likes to do: spaghetti strainer filled with unusual flavored pasta, small container of cheese, garlic, sauce, a hot pad, etc. and wrap like an Easter basket with plastic and a big bow.
How about accessories for hiking/biking? Sports bottles with holders, biker's glove without fingers, fanny pack for stuff...
Computers are a tough category since every computer nerd out there is different (my brother's a unix geek, my cousin's a gamer, my uncle repairs them, etc.). Maybe paper, toner, organizational trays or boxes.
Think back to when you were growing up and write all those wonderful phrases you grew up with in a card. My brothers and I did that one year and were amazed at the number of phrases we remembered like "Do what you gotta do and get it done." "If you want something done right, do it yourself." and many more...Dad was REALLY touched when he realized we remembered all those lessons...letting your father know how much he means to you and simply letting your father know some of those lessons sank in will mean the world to him!

Men aren't usually big niknak fans, but if he's into cooking some really nice cooking oils would probably be much appreciated. If you have a Trader Joes in your area they have some great ones, Lemon yest olive oil, garlic olive oil, etc.
If you've got some time to do mail order before his birthday Boyajin has some really nice flavored oils and vinegars. Also, if you have time to mail order Spengers blackberry and raspberry vinegars are OUTSTANDING, expensive and worth every penny. My favorites are the blackberry basalmic and the raspberry basalmic.
You can find Spengers and Boyajin by doing internet searches.
