These are two sites set up to help new Mac users. As far as putting Windows on your new Mac, you must download BootCamp from this address:
http://www.apple.com/macosx/bootcamp/
You must also make sure you Mac has the latest firmware, which you can look up here:
http://docs.info.apple.com/article.html?artnum=303880
Don't worry about it though, if you don't have the appropriate version, BootCamp will notify you before you can continue with a Windows installation.
Once you have BootCamp installed, you will need a blank CD to burn the Windows drivers for Mac and a copy of Windows XP Home or Pro with Service Pack 2, full installation disks only. Once you have everything you need, just run BootCamp from the Utilities folder and you should be set. Just follow the instructions.

First off, congrats on your new Mac! You'll be very happy with it, trust me!
Now about this document thing. You can purchase Microsoft Office for Mac, which should come as a trial version on your computer. To get to it, double-click on Macintosh HD, double-click on the Applications folder, and there you will see all of your applications on your computer. You can drag any Applications down to the Dock (the bar at the bottom of your screen) so that you can access them easier later. If you need any help, I'm the right person. Feel free to ask me anything about your Mac, and I will most likely be able to answer it. Good luck, and I hope you enjoy your Mac!

If you can't afford M$ Office 2004 a couple of free alternatives are NeoOffice and Abiword.
