I wonder if Yahoo will feed people who are working hard on here non stop ?

I'm making stuffed manicotti. (EDITED TO ADD: IT WAS GOOOOOD TOO!)

Recipe (my recipe...LOL)

Large Barilla Shells
Ricotta Cheese
Mozzerella Cheese
Bob Evans Italian Sausage Mild
Bob Evans Italian Sausage Hot
Parmesan Cheese
2 eggs
Parsley
Your favorite spaghetti sauce (I always doctor mine...)

First, get the shells going on the stove. While you're doing that, combine the eggs, riocotta, 1/2 of the mozzerella, 1/2 of the parmesan and a small handfull of parsley in a large bowl. I use a potato masher to squish it all together.

In a large pan, cook the sausage. Toss in some italian seasonings if you want to. I usually throw in some garlic salt and garlic powder too. I'm a "everything but the kitchen sink" type of cook. After you've cooked the sausage, drain it, and put your spaghetti sauce in with that and let it simmer.

When your shells are done, rinse them in cold water so that you can cool them down enough that you're able to handle them with your fingers.

In a glass (or metal...whatever) baking pan, put a little bit of the sauce mixture on the bottom of the pan, so that when you put your shells in, they're not resting on the bottom of the pan.

Take a table spoon and stuff the cheese mixture into the shells so that it fills them out. Line them up on top of the sauce in your baking pan.

When you've stuffed all the shells, they're lined up all nice and neat in your pan, take the rest of your sauce and pour it over the top of all the stuffed shells. Take the rest of your mozzerella and cover the top of your sauce. Take the rest of the parmesan and sprinkle it over the top of your mozzerella.

Bake for 45 minutes at 350 degrees.
