Because most men have the idea that all women do is shop, and sometimes they are right. I know too many women that are goofballs, and dont know the first thing about a car, except where the gas and break is.
But some women, like us, are actually pretty smart, and enjoy doing what we do. Ignore the idiots and keep the work up!
Check out my truck and my gas saver I work on too:

I had little help on the truck, and none on the car. I did the performance mods, the interior paint, and all that, minus the shaved tailgate and front valance, of course. lol

Because humans have the disturbing trait of generalizing without bothering to gather information.
For instance, I eat pizza for lunch (usually) during workdays. The selections are limited -- either subway or pizza. Because I eat pizza so often, coworkers say that (a) my cholesterol level is high and (b) that I only eat pizza.
There are certain obvious facts that they do not even bother to consider when arriving to those false conclusions. I eat breakfast, dinner and snacks. I do not eat pizza during those times. They often conveniently "forget" the times I eat subway or the times I brought lunch. I also eat during the weekends.
My cholesterol level is actually 176 (with the good cholesterol at 77). They simply generalized my total eating habits based on what they see during lunch.
It is like generalizing that all women do is shop so something has to give, which apparently would be cars.
To determine accurately with some high degree of confidence that "women don't know anything about cars" would require effort on someone's part. The person would have to gather data on the maintenance of cars by women. Such effort is lacking -- primarily because people will not spend the effort if they think they already know the answer.
Then there's the tangents. Certain individuals equate the use of cars to knowledge of them. This link lacks any form of logic and reason but that does not stop people from making such connections, especially since not everyone has an interest in learning how to fix cars.
There are quite a number of people in this world who know very little about cars but drive them quite well (with the occasional speeding ticket). Just because someone can drive the car well; it does not mean that person can fix it. Conversely, just because the person is a poor driver; it does not follow that the person doesn't know what's "under the hood of a car".
But time and time again, a person's skill in manuvering the vehicle is somehow linked to that person's knowledge on fixing it or maintaining it.
Then there's bad habits, particularly procrastinating. The car requires its oil to be changed every so often as an example. (Putting gas in the car is another common example.) People procrastinate. Things get put off. Sometimes bad things happen when they do. Rather than blame it on bad habits; they blame on the woman's inability to know about cars.

My first car was a 1969 Camaro. I could do minor tune ups, plugs & wires, points, etc. I loved that car and one would think a male car enthusiast would have, also.
I took the car in once to have the head gasket replaced. On the Ohio turnpike, I ran completely out of oil, because the repair had been shoddily done. I needed a tune-up and drove the car in, the car was worked over and I was unable to even keep it running! The owner said "it came in like that, but they could fix it for more $$$." I sputtered off and had got a second opinion, it seems a carburetor adjustment screw had been broken off.
Some not only, insult women with functioning brains who invade their sanctuary; some even deliberately damage our cars. Exactly, why would someone do that? Pride in achieving and maintaining that level of ignorance is, beyond me.
The last time we bought tires, I asked about the D.O.T. info and the salesman commented that no one had ever asked him about that. He was impressed and said so, nice. I learned about that from Consumer Reports Magazine.
U.S. DOT Tire Identification Number
This begins with the letters "DOT" and indicates that the tire meets all federal standards. The next two numbers or letters are the plant code where it was manufactured, and the last four numbers represent the week and year the tire was built. For example, the numbers 3197 means the 31st week of 1997.

We tend to automatically think that anything dirty and involving hard work usually doesn't appeal to women.
Of course I don't care whether a girl is good with cars or whatever, it is just an assumption for most women.

It is purely stereotyping. The vast majority of women lack any interest in the mechanical aspects or cars so people (including women) make the assumption that women don't know anything about cars.
If you watch any of the car shows on Speed or Spike, however, you discover that there ARE women who are very knowledgeable about cars. Sadly, in my opinion, they are in a minority.

most girls dont know much about cars.. thats what makes men usefull.. if women knew stuff about cars we would be useless an we'd all just die and vanish... you are prolly the 10% of the girl population that knows stuff bout cars.. so once a man like me realizes that you know stuff bout cars.. then we dont think you dont you know anything about cars anymore.. problem solved... now every1 on yahoo!answers who read this knows you like cars.. grats babe =)
the difference between girls and guys is that you said "I have my old car which is an 88 camaro"
my dad built a RS '68 camaro from pratically scratch and it has ALL clean+polished original parts.. he even took all the parts out of the engine and cleaned + polished them.. he started it when i was like 2 and has been working on it ever since ... now hes down to more of the perfecting process.. im 17 now and almost 18...
girls = 7/10 rating
guys = 10/10 rating
further proves...
boys rule and girls drool....

Well let me tell you why...sister. Because my girlfriend is bumping off curbs all the time. Because my friends daughter had her car towed to get fixed, and it was out of gas. Because my co-worker backed out of her driveway into her house. Because my other co-worker just told me today that she ran out of gas today, and called AAA insurance and had them come out. Enough said.
