There is a way of influencing your dreams during the night, and that needs some work during daytime. I tried writing down my dreams every morning for some weeks: first three days i only had part of a dream. Few days later i had two or three dreams pretty clear in my mind when waking up. After about two weeks it took me half an hour to write all the dreams i remembered: about 7 per night.
By this time it also started to happen that i realised while sleeping, in some dreams, that i was dreaming. And i could decide to keep dreaming, not wake up, and see if i could interfere with the things i dreamt.
These type of dreams are called lucid dreams (type that in a search engine and you'll find more information on it).
If you are more often having the same kind of (bad) dreams that you want to influence, you can write down the way you want it to go during the day. Visualize this just before falling asleep.
If you want to flie or do other nice stuff in your dreams: this writing exercise will help as well.

PS2: if you are hunted in your dreams, try to find out what is hunting you, and be determined to not run away anymore: look what the "monster" wants; shake its paw and ask why he is after you. It will transform into a present. (really!)

Try to avoid foods high in carbohydrates before you sleep, you'll get better dreams then

Put a sock under your pillow if you want to have a nightmare. Not that I believe that bullcrap myself.
