Therer are an awful lot of fun things to do in New Jersey, but a lot of them depend on the time of the year, and what you would like to see that is different. No knowing what you are interested in, I offer the following.
The Jersey Shore is famous for it's beaches, boardwalks, the amusement piers, and bed and breakfasts. There are beautiful hills and mountains, it's quaint towns like Cape May and Lambertville. New Jersey also has some of the best restaurants in the country. Of course there is Atlantic City, the crown jewel of the Jersey Shore with it's first rate gambling casino's, entertainment and restaurants.
New York City and Philadelphia are just a short drive across the river.
National Geographic magazine has called New Jersey "America in Miniature."

North or South Jersey makes a difference. In North New Jersey you could head up to NYC and in South Jersey you could head for the Philadelphia Area.
I guess it also depends upon your idea of fun. Looking for restaurants, good clubs or bars? Live entertainment? Pop music or theatre? Sports related activities? Do you want to go to a sporting event, try some skiing or snowboarding?
Really, the sky is the limit in that part of the world. Just search for whatever you want and the name of the city you want in any search engine and you will come up with a lot of ideas. From there we can tell you if we have any experience with them and if they were good or overrated.

Whereabouts are you visiting? I'm from Jersey and there's a lot to do here. We have a ton of malls, historical sites, amusement parks, museums, zoos, boardwalks and Shore sites, etc. What types of activities are you interested in?
You can easily get on a train and go to New York or Philadelphia from pretty much any part of the state as well.

Believe it or not NJ does have some fun things to do. Trying going to Atlantic City. There are lots of Casinos. There is also a Ripple's Believe it or Not Museaum on the Boardwalk. We also have a Great Adventure. Depending where you are in NJ, you may be near Philadelphia or New York.

We went to NJ and took a drive to Philly, that was really fun! There's some big open-mall where there are all kinds of sellers - unfortunately, I don't remember what it was called, but it was downtown Philly and we were able to visit some museums and see all the old historic buildings and court houses. Highly recommended. Maybe somebody who is from there can tell you what I'm talking about. (it was the building with the statue of Lincoln sitting in the chair)

NJ has lots of farmland so if you have children, it would be educational for them. In addition, if the weather is permitting, the Jersey Shore is full of fun regardless of which town. The boardwalks are loaded with games, shops, arcades, good restaurants and overall just fun.
