We see evidence that Adam spoke Hebrew because he gave Eve two names, each of which makes sense only in Hebrew. Not sue what the actual language was, but humans didn't change it. According to the Bible, humanity got together in Babel to create a tower that would reach up to Heavan. God didn't like the idea so he created the different languages so those people would not be able to communicate with each other any more thus not be able to finish their tower.
