Correct me if I'm wrong, but I seem to remember hearing that saying 'bless you' when someone sneezes was because people thought that evil spirits entered a person's body when they sneezed. I know some people still say 'bless you' but most people I know now say 'blush you' so when did this change? How did 'bless you' change into 'blush you'?

It didn't. SOME people are rounding those letters together and saying something that sounds similar to "bleshoo" or blushoo", but I can guarantee that if they typed their words, they write, "Bless you." It's the same with when SOME people say, "Last year." I usually hear them say "Lasheer." Sometimes to hear each word sounds a little stilted. But, hey...at least their blessing you instead of remaining silent! =)

I've never heard anybody say blush you. I don't like people commenting at all when I sneeze. What's the point?

Never heard of it "evolving". We still say "Bless You" at all sneezing times !
