I tell them to say "stinky feet" - usually gets a natural laugh out of them. And if it doesn't, it still gets your lips into a smile.

The reason you say cheese is so that when the camera clicks and the photo is taken your mouth looks like it is in a smile. The eeeee sound forces you to show your teeth nicely and it works well with children especially. If you say Booze it looks like you are about to suck on a pickle. Not the most flattering face you can make for the shot... not to mention that once again this was invented for children to make a smile for the photographer and Booze is for adults. In other cultures they say other words traditionally to get the same result. In Italy the word for pear is used.

"Cheese" is supposed to form your mouth into a smile, but personally I think it usually looks terribly fake. Forced smiling/posed pictures often turn out sorta fake looking but literally saying cheese has to be the worst! IMHO, the best pictures are those taken when people are just doing whatever they're doing, sometimes there'll be silly ones in there too when someone just opened their mouth in a wide 'o' or just looked away or tossed their head but in the great majority looks very nice & natural. And with modern digital photography you just delete the ones that didn't come out right :)
