with the stock rim being 15x 6.5 and the current rim being 15x7 how much does that change the tire size and width when changing tires

15 is the rims diameter expressed in inches.

6.5 and 7 is the rims width expressed in inches.

So it will not actually change the tire size, the 15 x 7 rim is just wider by one half inch, this rim will except a slightly wider tire but it is not necessary.

Not much, a tire that fit on the stock wheel should work with the current wheel.

Half inch doesnt change much you can use the same tire.
