Actually there are several methods. It depends on whether the text is 'live' or not.
You can use Acrobat Professional to edit pdfs or you can open them with MS Word or even Adobe Illustrator - that is if the text is live. In Acrobat, use the tools menu and the advance editing submenu and then the 'touch up text' selection. This will allow you to edit your text.
If you open it in Illustrator or Freehand, the text will be snippets (that is not entire text lines). You can use the text tools there to change what you wish.
For MS Word, open the application and then select open "Any readable document" from your menu options. You can recover text that way, I'm not quite sure if you can save it out to look exactly like the original.
If you are trying to edit a photo or something that has been rasterized (not live text, just an image), you can open the pdf in Adobe Photoshop, the Gimp or any image manipulation programs.

The ACROBAT application will open and edit existing PDFS. (Not Distiller, not reader- just Acrobat!).
Usually, it's recommended to do all editing in the original document and make sure it's the way you want it BEFORE you convert it to a PDF. But if you didn't create the PDF, that's not possible, so you might need Acrobat's editing capabilities.
There are some advantages to editing existing PDFS in Acrobat- particularly the use of the Form and Bookmark tools. Acrobat can also "grab" Web pages or whole Web sites and convert them to PDFS.

Either Microsoft Word 2007 Beta, or you need to get a PDF editor which can be found on google by searching.

You need Adobe Acrobat.
Most of us only have the free version - Acrobat Reader - which does not allow editing.
Unfortunately Acrobat is about $300
