Poussin is, essentially, a small chicken and so can be roasted in the oven the same way as with larger birds. However, make sure you adjust the timing as the smaller bird will take less time to cook and you wouldn't want to toast it!

My favourite method for preparing poussin would be 'en confit.' For this, the bird (or a particular cut of it) should be cooked for a long period of time in duck fat. The resulting flavour is full and rich (though, I must add, not necessarily weight-watcher-friendly).

It's only a small chicken, so treat it gently as in don't roast it for such a long time as you would a bigger one (but that's just common sense anyway) and do it at a slightly lower temperature. Otherwise, it's much the same. Of course, with really small ones you can even deep-fry them whole (one per person) and serve them with chips.

I feel sorry for all dinky things, even the little jars of marmite and things like that. I think you do just roast them, they should come with cooking instructions on the label if you buy them from a supermarket.

Yes, but be carefull not to over cook it, it is a lovely thing to eat, I myself am cooking a couple of them tonight, served with roasted Pa Paya, lovely nosh.
