Professionals like lawyers and doctors learn a lot from experience. But that`s not the reason why they call it practice. Practice is the practical application of theory.

The term means "apply their knowledge in praxis" and has nothing to do (one can hope) with the groping for excellence e.g. beginning musicians are known for.
