I need to know how much active dry yeast, either by weight or by volume, is needed when a recipe from the USA calls for "1 package."

The 1/4 ounce packages of dry yeast measure about 2 1/2 teaspoons of yeast. If you use it frequently, you can buy the jars of dry yeast and measure it yourself. Here is a picture, if it helps (I am myself a very visual person!)

This website also has instructions on how to use dry yeast successfully as well as some baking recipes.

Yeast is always sold in packages. In these little packets, like Fleischman's yeast. Use just 1 little package. These packets probably contain about only a (level) teaspoon or two of yeast. Yeast is very powerful, so you will not need much of it in a recipe.

You can buy active dry yeast in packages which should tell you how much (usually a whole packet) you would use say per pound of flour. It is good because it does not require the correct temperature of liquid before using.

One package of Fleischmann's active dry yearst is 1/4 ounce, or 7 grams. Make sure your liquid in the recipe is not too hot or it will kill the yeast.
