For hotels, check www.asiarooms.com I would probably start and end in Bangkok and stay in Pattaya a couple days. Pattaya is on the beach. I have stayed at the Siam Bayshore Hotel. It's nice right on the beach and is at the southern end of the walking street. The walking street is where all the beer bars and go-go bars are.
For escorts, the following website has a listing of alot of escort services. Check out their websites and see which woman will do 7 days and at how much. What I recall is the price will probably be in the neighborhood of USD 1,000 to 1,700 or more. I was curious once.

What to see? Good question. There is of course the The Grand Palace, the height of Thai Culture. You could take the cruise on the Chao Phraya river. Or even the dinner cruise. The Skybar has a fantastic view of Bangkok. Drinks are expensive more to USA or European prices. You can make a reservation online but, make it in advance.
If you like dancing, there are discos or jazz bands all over Bangkok.
Actually, you could spend the whole week in Bangkok, if you felt like it.

Its no problem to find a girl for sex and so. The problem is that most of them have no experience in guiding you around the country.
Please, be near the culture. Its a experience itself. Don't stay at a fancy hotel. Instead find a nice small guesthouse near Sukhomvit Rd. excl streets as Soi5, soi 8. Plenty of nice small guesthouses with breakfast and so.
If you like elephant riding, rafting, hill tribe, tiger temple, RiverKwai bridge, train trip along stunning mountainside, jungle, bout trip, waterfall, national parks - then you only have to take a minibus to Kanchanaburi, 2 hours driving from Bangkok. It have it all, and you can also try sleep on floating guest houses here.

For your week stay, probably the only place will be to head to Pattaya and just stay there and do bar-hopping. This should fill up your time. As for your other request, sorry, you will have to help yourself. Thailand is not that open as you think, really. Maybe your money can buy what you want instead, but then again, it need not be in Thailand.
