A Muslim man is permitted to marry a Christian or Jewish woman, as these are "people of the book" and the woman is not required to convert to Islam.
A Muslim woman is not permitted to marry a non-Muslim, based on an assumption that the man is the head of the family.
Regarding children, they are never "required" to convert.
The Koran guarantees freedom of religion among the people of hte book, but not all Muslim countries follow this -- some countries make up rules in the name of Islam but htey are not Islamic at all. The civil law will vary from country to country.
No Muslim is permitted in Islam to marry a polytheist. In fact, Muhammed drove all the polytheists out of Arabia -- announcing that they had four months to convert or get out or they would be killed, unless they asked for "instruction" in Islam and then they would be "instructed" and "conveyed to a place of safety."
But nowhere does the Koran say children must convert. In fact, the Koran says that faith is what counts, not submission -- and faith is a conversion of the heart.

Muslim men can marry a Muslim, Jewish or Christian woman and she is NOT obligated to convert. I know because I married a Muslim man and I am not Muslim, nor am I pressured to convert.
Muslim women are not permitted to marry a non-Muslim man unless he converts before the marriage.
Children from a previous marriage are not obligated to convert. If they are still young and the parents choose to raise them as Muslims, they can do so.
Children conceived from the marriage of a Muslim man and his wife are to be raised as Muslims.

There is no such requirements at all. Coercion in religion for conversion is absolutely forbidden in Islam. It is mentioned in the Quran in many verses. However, if the kids start liking the life style of the parents and want to adopt the religion after puberty then they can exercise this choice of their own free will. The witnesses observing the conversion have to make absolutely sure that there was no force or coercion in any form involved.
However, one has to be fair in looking at the issue. It is part of the Muslim faith that every child is born innocent, free of sin and remains so until the age of accountability at/after puberty. So they are already considered in submission to God and by definition Muslims. Like any other parents, the parents have the right to educate the children with sincerity in teaching them what the parent thought was a good learning for themselves but not to force anything on them at all. They still have to provide loving care whether the children accept the parents way or not.
