The salt should not be an issue. The recipe calls for salt to balance the sweetness. I have made tons of chocolate chip cookies. I like to use the Nestles recipe adding a 3 oz bag of fine ground almonds. Cook times change the texture and to me, texture is a big issue when making cookies. I never cook my cookies longer than 9 minutes, then I take them out and let them settle on the cookie sheet for a few minutes before removing them to the cookie rack..

use unsalted butter for baking always because the recipe usually calls for salt. baking is a science and the salt in the butter doesn't work the same as adding salt and using unsalted butter. salt is added to bring out the flavors and balance all of the ingredients.

two reasons to use unsalted butter in your baked goods:
1. unsalted butter has a shorter shelf life and is therefore fresher than salted butter.
2. usually your recipe calls for adding salt and you'll end up with too much salt in your recipe if you use salted butter.
I agree with the prior answer to avoid over mixing the dough to avoid forming gluten from the flour mixing with the wet ingredients. Mix just until all ingredients are incorporated (mixed together).
Also pull out the cookies a little earlier than when they start to brown on top for more moist and chewy cookies. Otherwise, cook according to directions for a crispy cookie.

Always unsalted because you can control how much salt you want in the cookies by adding salt yourself. With salt butter, you can hardly control the content of salt in the cookies because every brand has different content of salt.

Most recipes specify unsalted butter but I don't think the butter/margarine really makes a difference, my cookies come out great with salted margarine.
How do you want them to turn out?
I like mine to have some shape to them so I use butter flavored Crisco. I like mine chewy but with some shape to them.

Unless the recipie calls for unsalted butter, it ususally means that you use regular salted butter. I still think that the best choc chip cookie recipie is the Tollhouse recipie on the back of the choc chip cookie bag.

Unsalted is better, so you can control the amount of salt in the cookies. Different brands put different amounts of salt in their butter, so using unsalted helps you maintain consistency also.
It is really important to use ingredients that are ALL room-temperature when baking.

okay if baking anything sweet use unsalted butter it has the best texture for baking it does better in the batter than salted good luck and the only diffrence in the two is the salt

It depends on the flour.If it's self-rising, the salt has already been added, thus ,do not use butter that is salted.
I never bake them as long as the recipe calls for because I like mine chewy, not crispy.Toll House recipe rules.
