The bitter taste comes from what the dye is composed of. Alot of people have allergies to it as well as just not liking it. With alot of dyes you have to use quite a bit to get a real red color and not just an off pink shade.
I make my own icings and I use Wilton brand no-taste red coloring. It works really well with out the awful taste.

I dont like red icing either. It is what they make the dye ou of that gives it that bitter taste.

Red bugs...IE (red no 5) for coloring...called bug juice in some states. and yes its bitter.
