I found a recipe for biscotti at allrecipes.com and it calls for butter. I live in Oklahoma and we are in a deep freeze right now and I don't want to go to the store. I just want to hang out in my jammies and slippers and have coffee and biscotti! Also, what is anise extract? I saw where other people substituted almond extract for it and that's what I'm doing but I was just curious what it is. Thanks!

You can use margarine any time in place of butter. As for Anise Extract it's made from the oil of anise seeds. It tastes like licorice and it's very sweet. Almond extract would be yummy. So would other flavored extracts. Enjoy and stay warm!

Anise extract is a flavoring produced from dissolving the oil of anise seeds into alcohol. The extract has a sweet licorice taste and is used as a flavoring for cooking.

You can substitute margarine but you may not get the desired results.

Sunflower is a vegetable and sunflower oil is much better for you than lots of other oils. Yes, use your sunflower oil. You could use your Olive oil also, but it's a lot more expensive than sunflower and you don't need the distinctive taste in your cookies

In the superstore, fruits are usually selected much too soon. Some are rocks, many are bitter. Some of the fresh vegetables are typical right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.

Butter for margarine is fine if you're not concerned about the nutritional info.
