How much of a cup of egg whites equals one egg? Or how many egg whites equal one egg? I'm gonna be doing some baking soon, and I would like to know.

Ok, one egg white per egg. That is a confusing question. I've been baking for years, and recipes always say one egg, or the whites of two eggs, etc. I have never seen it refered to as a cup of eggs,,,,maybe when using the egg substitute stuff like Egg-Beaters you use 1/2 cup etc., measurements, and then it will tell you on the egg substitute package how to measure for baking.

Since an egg white is half of an egg it makes since that it would take two egg whites to replace a whole egg. That said, there is too much of a good thing (the good thing being less cholesterol). If a recipe calls for one egg, I'll put in two egg whites. If it calls for two eggs, I'll put in one whole egg and two egg whites. (I do hate tossing the yokes though.)

When it comes to recipes that may say "1 cup of eggs" the reasoning that I do this is because eggs are not the same size. Our family has a chocolate pudding recipe that seemed to come out differently for every person. After watching a few family members, I noticed that some liked XL eggs while others bought whatever was cheapest. I always buy L (it's the standard size in recipes). Though the recipe called for 4 whole eggs, the liquid amount of e eggs continued to vary. When I changed it to a measurement of eggs (the last time it took 5 eggs, the time before that it took six) the pudding started turning out more uniform.

I would also like to say that in this case, substituting egg whites for whole eggs simply does not work. Actually, if five eggs isn't enough, but six is too many, I would add n extra yoke.

It truly depends on how the egg is being used. If it is to thicken a food, then the yoke is important, very important. If it is to make a food rise, then the white is more important, but don't use too much whites or you'll have a rubber cake or muffins. If you want to get down to the lowest acceptable amount, simply lower the yoke amount by one each time, but remember that one egg white DOES NOT equal one egg.

one regular egg is a 1/4 of a cup.... normally recipes aren't going to ask for 1 3/4 cups of egg whites they are going to say 1 or 2

On the Egg Beaters (egg whites only) carton, it says 1/4 cup = 1 egg.

A whole egg has a volume/weight of 1.5 oz total. 1 oz is whites, .5 oz is yolk. Don't let this scare you off, but 7th grade algebra is all you need to figure out how to scale out baking recipes. Good luck!

1 egg white would equal one egg ! It's the same as a ton of bricks and a ton of feathers...they weigh a ton !
If you are needing one cup of egg whites, you will need 4 eggs !
