Where are they normally used. Please elaborate with example (if possible)

you say "having said that" in conjunction with another bit of information.

-my sister is a terrible driver and has been in 5 accidents this year. having said that, she got into an accident today.

"that's it" is another way to say "that is all" or "i have had it"

-thats it! i am never doing that again.
-thats it. i am done.

It's like say 'but' or 'however'.

For e.g.

I like puppy dogs. Having said that, I don't like cleaning up after they have pooped all over my kitchen floor.

That's it can mean either that's correct or defining an ending.

For e.g.

That's it, I've had enough of this for today.

I think that's it.

when I hear having said that, I think "OK, here comes the truth". It could mean different things in different contexts.
