My cupcakes always harden once they cooled.. how do i maintain the moisture and softness of the cakes like those in the shop?(which usually sits there for a day and still stays soft!!)

When ever I make a cake or cup cakes I add a little pudding ( dry pudding ) thats the same flavor of the cake mix I'm using.

Most muffins bought in stores are not made the same way we do. They come in buckets, ready to bake and the amount of butter in it is unbelievable. (I worked with it)

One trick is to fill one of the cups of the baking pan with water before baking.

NEVER use a hand mixer. Think of muffin batter as a tiny soft baby that can easily crush.

The best utensil for mixing muffins is a wooden spoon.

Make a well into the dry ingredients of the muffins and add the wet ingredients into the “hole”. Gently fold the dry ingredients over and stir softly. NEVER stir the batter more than 20 times; count each turn of the spoon around the bowl as one, two, and so on.

It is okay to have some lumps in the batter. The object is not to rid the batter of the lumps, but to not over mix.

When putting the batter into the muffin tins, I like two methods. The first, method is to use a ¼ cup measuring cup. My other favourite method is to use an ice cream scoop with the sliding piece inside to easily push the batter out of the spoon and into the cup.

The muffins that you get at the store or in a bakery have high amounts of butter, or other things in them that are not as good as what you are making at home. So the food that we do make at home does not last the same but is better for you........Sometimes when you add fruit they will be soft but still may not last that long........The link below has some good ideas.......

Once they aren't too warm to the touch, I cover mine with a big plastic bowl turned upside down and it covers the plate. Don't know why your muffins actually get hard right away, be careful when you are blending the ingredients, I have always heard not to over-stir the batter, so I blend in the ingredients gently and with as few strokes as possible. I think that will help you !

Store them in an air-tight container. Contact with air dries them out.

add a little more oil, oil keeps things moist dont add alot just a little bit more
