Vegetarian Sheppard Pie
4 medium potatoes, peeled and quartered
1/2 cup potato water
1/4 teaspoon salt
1/4 teaspoon onion powder
8 ounces black beans or
1 1/2 cups garbanzo beans, cooked
1 cup frozen corn, thawed
1 cup frozen peas, thawed
1/3 cup peanut butter
1/2 cup water
paprika
Preheat oven to 350. Place potatoes in a large saucepan, and add just enough water to cover. Boil for 15-20 minutes, or until tender.
Drain potatoes, reserving liquid. Mash cooked potatoes with hot water, salt, and onion powder.
Add additional liquid if desired. Set aside. Combine beans, corn, and peas in a 9 inch pie pan. In a separate bowl, whisk together peanut butter and water, until smooth. Pour sauce evenly over vegetables. Top with mounds of mashed potatoes. Sprinkle with paprika. Bake for 30-40 minutes, or until potatoes start to brown.
Serve hot or at room temperature.

shepherd's pie recipe with beef.
INGREDIENTS:
2 cups cooked chopped meat
1 tablespoon finely chopped onion
2 cups gravy
salt and pepper
2 cups mashed potato, prepared with milk and seasonings as desired
salt and pepper
1/8 teaspoon paprika
1 tablespoon butter
PREPARATION:
Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes. Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd's pie is thoroughly heated.
This shepherd's pie recipe serves 4.

This is how I make it......for wine, since you like white; go with a bottle of Mirassou Chardonnay!
Shepherd's Pie
2 pounds ground beef
1 onion, chopped
1 to 2 cans beef gravy
2 to 4 cups frozen corn, cooked
2 to 4 cups mashed potatoes
2 Tablespoons butter or margarine, melted
Paprika
In a skillet cook beef and onion over medium heat until no longer pink; drain grease. Add gravy to moisten; reserve some gravy for on top. Spoon meat mixture into a large greased baking dish. Spread layer of corn over meat. Next spread mashed potatoes evenly over the top. Drizzle with butter and sprinkle with paprika. Bake, uncovered, at 350 degrees for 30-35 minutes or until heated through. Serve with additonal gravy.

1-1/2 pounds potatoes, peeled
1 pound roast lamb or mutton, minced
3 ounces butter
1 medium onion, peeled and finely chopped
1/2 pint lamb stock (made from drippings of the roast with the fat taken off)
Salt and pepper
1/4 pint (approximately) milk
Preheat oven to 180 degrees C/375 degrees F. Fry the onion in 1 ounce of the butter until lightly browned. Stir the onion into the minced meat and season well with salt and pepper. Add the stock until the mince has a soft, moist consistency. Put into an ovenproof dish and leave to form a skin.
Meanwhile, boil and drain the potatoes. Mash them with at least 1 ounce of butter and enough milk to make them creamy. Season them well. Spread the potatoes over the minced meat, roughen the top with a fork, and dot with the remaining butter. Bake for 30 minutes at the top of the oven so the potato is well browned.

Shepards Pie
1 lb Cold, leftover roast, lamb, 1/2 oz Flour
Beef, veal, pork orn 1/4 pt Meat stock or milk Combination of these meats Salt and pepper to taste
1 1/2 lb Potatoes Milk
1 1/2 oz 1 1/2 T butter or margarine
Mince the cold meat, removing all fat, skin and gristle first. Cook potatoes, peeled and cut in halves, until soft enough for mashing.
Melt 1 tablespoon butter or maragrine in a saucepan and stir in the four. To this add slowly stirring, 1/4 pint meat stock or milk. When smooth and fairly thick and just to the point of boiling, stir in the minced meat. Stir over a low heat for 3 minutes, seaoning with the salt and pepper to taste. Pour into a flat oven proof dish and refrigerate.
Meanwhile, mash the potatoes, season and stir in 1/2 teaspoon butter or margarine, and a little milk and whick with a fork until smooth. Set aside until the minced meat is cool enough to have solidified and formed a solid surface. If you add the potatoes to hot mince, it will sink into it.
When cool, spread the potatoes about an inch thick all over the dish, working lightly with a fork. Dot with pieces of butter or cover with grated cheese, if liked. Bkae in a 400 degree oven for 30 minutes.
This dish may be prepared in the morning and left for cooking in the evening wothout harm. Cabbage is the best vegetable to accompany this dish.
As for the wine if you can find Verdi, its good kind of sweet

This is how my mom always made Shepherd's pie. (Quick & Easy)
1 lb ground beef
1 Med Onion Diced
2 carrots Diced
1 pkg frozen peas
1 pkg brown gravy
Mashed Potatoes
Brown ground beef with onions and carrots until cooked and carrots are tender.
Add frozen peas and gravy. Mix all ingredients together.
Place in a casserole dish and cover with mashed potatoes.
Bake in 350 degree oven until warmed thru and potatoes are lightly browned.
